If he is not a Jew or Christian, he can freely choose between conversion or death. Apostates have to be killed according to the sahih hadith in which it is reported that the prophet said: "if someone changes his religion, kill him". All shariah handbooks explain this very clearly. Quran 2:256 does NOT mean that you can leave Islam or take the islamic rules set by the Qur'an and the Sahih Hadith lightly. This is a complete misconception to fool non-muslim societies.
